Fillet O’ Sockeye Salmon Burger
Home Made Fresh & Organic Fish Sandwich

This is a good one for all you burger lovers.  Prepare the Sockeye salmon patty’s ahead of time for a quick and tasty summer BBQ anytime! 😉

Fillet O’ Sockeye Salmon Burger | Ingredients:

  • 8 garlic cloves
  • 4 small green onions
  • 5 stalks fresh chives
  • ¼ C fresh parsley
  • 2 eggs
  • 1 ½ tsp dry mustard
  • 1 tsp sea salt
  • 1 Tbsp olive oil
  • 2 Tbsp cream cheese
  • 2 salmon fillets deboned approx 4lbs total
  • ½ C parmesan cheese
  • 2 C ground corn tortilla chips
  • Freshly ground salt & pepper
  • 1/8 C flour (I used spelt)
  • Melted butter

Fillet O’ Sockeye Salmon Burger | Directions:

Place the parmesan cheese, tortilla chips, salt & pepper and flour in food processor.  Process with blade to a fine crumb consistency and set aside.

Next, put the garlic, onions, chives and parsley in the food processor and chop into small pieces.  Add the mustard, salt, eggs, cream cheese and oil and mix together.  Make sure the salmon is de-boned and add to processor bowl.   Mix with blade until the salmon is well combined with all the other ingredients.  Continue until the salmon mixture has reached a paste like consistency.  Measure out salmon in 2/3 cup portions and form into patties.  If you don’t have a hamburger press use plastic wrap to form with as it is very sticky.

Place crumbs in dish suitable to dip the patties in.  Give the patties a light coating of the crumbs.  Let patties sit in fridge for approx an hour to set.  Grill patties on heated BBQ.  Brush lightly with melted butter on each side while cooking.  Try not to over cook so they don’t dry out.  Excellent on a Ciabatta bun with some homemade tartar sauce!
