– Some Like it Hot Sauce –
( Venison & Wild Game Sauce )

This is a simple homemade sauce with some heat! Use on it’s own as a dip, add to venison or other wild game meats while cooking or can be used as a spicy condiment to your meal. This is a great compliment for the our Moose Quesadillas recipe.

Some Like it Hot Sauce | Ingredients:

2 Tbsp Olive Oil
1 small Yellow Onion – chopped
2 Red Peppers – roasted, peeled and chopped
2 Jalapeños – roasted and chopped, do not peel or remove seeds
4 Hot Peppers – roasted and chopped, do not peel or remove seeds
6 Cloves of Garlic – roasted, peel after roasting
½C Water
1C White Vinegar
½tsp Sea Salt
½C White Wine

Some Like it Hot Sauce | Directions:

Sauté onions, until almost caramelized, in the olive oil in a frying pan. Add all the roasted and chopped peppers. Mix in sea salt and all the liquids. Let simmer on med heat, just under boiling temperature. When peppers are cooked remove from heat and puree. Put pureed mixture back into pan. Cook on low heat for approx an hour. Stirring occasionally, do not let boil.
