Susan's Organic Italian Style Wild Game Osso Buco Recipe!
Tis the season so we thought we’d post up a recipe for one of those cuts of meat that has received a bad rap over the years … the shank. Most hunters just grind them up for burger thinking that they are much too tough to cook any other way. Well … this Italian style Osso Buco recipe just might change your mind! A bit of a process but definitely worth the extended cooking time. Give it a try and let us know what you think … we’re guessing it will put your grinder out of business!

This is one of my favourite kinds of meals to make and even more so – to eat. A truly quick and easy meal to make that is adaptable for the fussy eaters in the family. Be prepared to need a fork and knife, this is not your average Quesadilla!

Susan's Pulled Venison Roast!
This is one of my son’s favourite ways to eat roast. It is super easy, put it on in the morning and at supper your meal is ready. Meat cooked this way comes out very tender due to the slow cooking in the beer or wine. You can also use up some of the tougher cuts because you just can’t cook a roast this way and have it come out tough! Once it is cooked the meat just pulls apart in strips with forks. This type of meat is great for sandwiches, fajitas, and with gravy over mashed potatoes.

Corned Venison: (absolutely fabulous!)
If you like corned beef, wait till you taste this. You can use any cut of meat but this is especially good for making the less tender cuts deliciously tender.

Peachy Sweet Venison Ribs

Susan's Peachy Sweet Venison Ribs!
Ingredients:
- Venison Ribs 3 lbs
- 10 C cold water
- Sea Salt, to taste, approx. 1 – 2 tsp
- 3 Cloves of Garlic
Directions:
Place ribs in large pot filled with cold water, salt and garlic. Cover and let boil, checking water and flipping ribs in pot. I usually boil for 2 – 4 hours.
Take the ribs from pot and remove as much fat as you can. Wrap in aluminum foil. Cove ribs with Peachy Sweet BBQ Sauce and place on BBQ for 1 – 2 hours.
BBQ heat should be on low. The ribs are already cooked from boiling in the pot. The time on the BBQ is to allow the ribs to absorb some of the sauce.
