Mamma Rosa's Simple (yet delicious) Fried Burbot!
So the other day I received a question on our 2012 Fishing Reports page asking for some information on locations to fish for burbot in the BC Interior. Although we try to make a couple trips each year to hunt these fantastically delicious creatures, up until the point of the question the thought hadn’t even crossed my mind … but now it was all I could think of!
Through out the rest of the day Mr. Stomach relentlessly sent messages to Mr. Brain and by mid afternoon Mr. Brain gave in and we were on our way to attempt to capture tomorrow nights supper! The good news is that we were successful in our quest. The even better news is that Mamma Rosa volunteered to cook some up for us! 
For those of you that have experienced fresh cod cooked the right way you know what I mean. For those of you that haven’t you’re really in for a treat! So without further a do … here’s Mamma Rosa’s extremely simple yet delicious fried Burbot cod recipe!

Ron Newman's Non Fishy Fish Recipe!
I’m not overly keen on eating trout or salmon. To me they are just too fishy tasting. However, take that same trout, soak it in a brine overnight and then leave it in my Little Chief Smoker for eight or so hours and it tastes great. The brine and smoking seems to remove most of that fishy taste.
Over the years, I’ve found that I’m not alone in this opinion. A surprising number of folks have expressed this same view about eating trout and salmon. So here is a way of cooking these fish that will remove that fishy taste.

We often get asked what the simplest way is to cook salmon or trout. The method we use and are about to describe is not only simple but also delicious!
This method works best on de-boned fillets but a whole fish or fish steaks will work as well.
The recipe can be completed on the BBQ, in the oven or is perfect for over the fire while camping!

OK here’s another delicious salmon recipe straight from Susan’s kitchen!
Susan’s Gourmet Salmon Casserole Recipe

Susan's Gourmet Salmon Casserole!
Ingredients:
• 1 ½ C Salmon
• 450 g Pasta – I prefer Penne
• 5 C Water
• ½ C chopped Mushrooms
• ½ large Yellow Onion
• 3 Cloves Roasted Garlic
• 2 C Whipping/Heavy Cream
• ½ C Parmesan Cheese (grated)
• 1 C Mozzarella Cheese – shredded or cut into cubes
• Salt & Pepper – to taste
• 1 Tsp Dill – dried (or to taste)
• 2 Tbsp Fresh Chopped Parsley (or to taste)
• Butter
• Olive Oil

Dijon & Brown Sugar Cedar Plank Sockeye Salmon
OK seeing how this year has turned out to be one of the biggest Sockeye salmon runs in history, since 1913 so far, we thought it would be appropriate to share a flyguy favourite BBQ recipe for these rich blue backs!
